Quick Ham & Spinach Breakfast Quiche
Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes
Yield: Makes 6-8 servings
Ingredients:
- 1 pre-made pie crust (9-inch, deep dish if possible)
- 6 large eggs
- 1/2 cup milk (or any milk/alt-milk you prefer)
- 1 cup diced ham
- 1 cup fresh spinach, chopped
- 1/2 cup shredded cheese (cheddar, Swiss, or whatever you like)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: pinch of garlic powder or onion powder for extra flavor
Directions:
- Preheat oven to 375°F.
- Place the pie crust in a 9-inch pie dish if not already in one. If using a frozen crust, let it thaw for a few minutes.
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, and any optional spices.
- Layer the chopped spinach, ham, and shredded cheese into the crust.
- Pour the egg mixture over the top, gently stirring with a fork to make sure everything is evenly distributed.
- Bake for 35–40 minutes, or until the center is set and a knife comes out clean.
- Let cool for 5–10 minutes before slicing and serving.
💡 Want to boost the protein? Add extra egg whites, stir in a scoop of cottage cheese, or double the ham. You can also swap in higher-protein cheeses like mozzarella or add a handful of cooked lentils or quinoa for a sneaky protein bump.
For the crust: Gluten-free or cutting back on carbs? Skip the crust and bake it crustless in a greased dish or muffin tin.
For the dairy: Dairy-free? Swap the cheese for a plant-based alternative or leave it out—this quiche holds up just fine without it.
