This no-fuss breakfast quiche is one of our go-to staples, great for during the week or on the weekend.. With a store-bought pie crust and just a handful of ingredients, it comes together fast but still feels special. Perfect for feeding a crowd or stocking your fridge with ready-to-reheat breakfasts for the week.

Quick Ham & Spinach Breakfast Quiche

Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes
Yield: Makes 6-8 servings

Ingredients:

  • 1 pre-made pie crust (9-inch, deep dish if possible)
  • 6 large eggs
  • 1/2 cup milk (or any milk/alt-milk you prefer)
  • 1 cup diced ham
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheese (cheddar, Swiss, or whatever you like)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: pinch of garlic powder or onion powder for extra flavor

Directions:

  1. Preheat oven to 375°F.
  2. Place the pie crust in a 9-inch pie dish if not already in one. If using a frozen crust, let it thaw for a few minutes.
  3. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and any optional spices.
  4. Layer the chopped spinach, ham, and shredded cheese into the crust.
  5. Pour the egg mixture over the top, gently stirring with a fork to make sure everything is evenly distributed.
  6. Bake for 35–40 minutes, or until the center is set and a knife comes out clean.
  7. Let cool for 5–10 minutes before slicing and serving.

💡 Want to boost the protein? Add extra egg whites, stir in a scoop of cottage cheese, or double the ham. You can also swap in higher-protein cheeses like mozzarella or add a handful of cooked lentils or quinoa for a sneaky protein bump.

For the crust: Gluten-free or cutting back on carbs? Skip the crust and bake it crustless in a greased dish or muffin tin.

For the dairy: Dairy-free? Swap the cheese for a plant-based alternative or leave it out—this quiche holds up just fine without it.
