Starbucks Dupe Egg Cups

Starbucks Dupe Egg Cups in the Instant Pot

Prep: 5 minutes | Cook Time: 10 minutes | Total: 15 minutes
Yield: Makes 6 servings

Ingredients:

  • 6 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced bell peppers (or other veggies)
  • 1/4 cup cooked turkey bacon or ham (chopped or for wrapping)
  • 1 tbsp heavy cream or milk
  • Salt and pepper (to taste)
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)
  • Red pepper flakes or other seasonings as desired

Directions:

  1. Grease a silicone egg bite mold or a similar Instant Pot-friendly container with non-stick spray.
  2. In a mixing bowl, whisk the eggs with heavy cream (or milk), salt, pepper, garlic powder, and onion powder. You can also leave the egs more intact like the photo.
  3. Add the shredded cheese, diced bell peppers, and turkey bacon or ham. Mix well.
  4. Pour the egg mixture evenly into the prepared mold, filling each compartment about 3/4 full.
  5. Pour 1 cup of water into the bottom of the Instant Pot and place the trivet inside.
  6. Set the egg bite mold on the trivet, making sure it sits securely.
  7. Close the lid of the Instant Pot and set it to cook on high pressure for 10 minutes.
  8. Once the cooking time is up, allow the pressure to naturally release for 5 minutes, then quick release the remaining pressure.
  9. Carefully remove the egg bite mold from the Instant Pot and let it cool for a few minutes before serving.

Enjoy!

Store any leftover egg cups in an airtight container in the refrigerator for up to 4 days. To reheat, simply microwave for 30-45 seconds or until warm. There’s also plenty of ways to keep these interesting—mix up the veggies, swap in different cheese, or add your favorite protein to keep things exciting!

Don’t have an Instant Pot? No worries! Check out the method and awesome ways to prep these from Meal Prep on Fleek. I highly recommend picking up some silicone muffin cups—they’ll save you a ton of time on clean-up!
